The Dragon is the most auspicious animal in the Chinese zodiac. In Chinese culture, the dragon
represents good luck, strength, health as well as the male element Yang as opposed to the female
Yin element. The dragon is a symbol representing imperial power and authority – particularly the
five-claw dragon which is the symbol for the Emperor or Empress. This menu is composed of a few
dishes from the ten course Lunar New Year feast which we always celebrated at home. The recipes
are passed down from Popo (grandmother), to my mother, and now to me to preserve the tradition.
Each dish represents a symbolic wish for the new year – health, wealth, prosperity, longevity, unity
of family and etc. The menu will be paired with wines especially selected by Cam so that you may
celebrate the Chinese Lunar New Year in your home.

Janet Cam is a Culinary Strategist and wine expert, best known as the co-founder of DC’s storied
restaurant, Le Pavillon, the first nouvelle cuisine restaurant in the U.S., honored with Wine
Spectator’s Grand Award for their wine list. Cam’s clients have included Chef Peter Chang and his
Q restaurant group (Q by Peter Chang, Mama Chang, and Nihao – named Esquire magazine’s best
new restaurant 2020), The Cosmos Club, and Vino Volo wine bars. Cam conducted 48 wine and
food pairings delivered during the Covid 19 lockdown. Most recently, she paired wines for the
dinner prepared by Chef Peter Chang for the Smithsonian’s gala honoring legendary cookbook
author and food historian Grace Young, the 2022 James Beard Humanitarian of the Year Award
recipient.
