Originally from Mexico City, the Executive Chef of Pascual (A New York Times “America’s Best Restaurant” 2024 and an Eater “Best New Restaurants in America in 2024”) and Executive Pastry Chef of Lutèce (A New York Times “America’s Best Restaurant and Washingtonian’s #2 Very Best Restaurant) seeks inspiration from local ingredients and the flavors she grew up cooking with her family in Mexico.
After many years of studying to become a professional ballerina, Isabel left arts behind and followed her passion for food into the pastry industry as a teenager. Her culinary career started in Mexico City when she was seventeen working as a bread maker for renowned chef Enrique Olvera’s landmark “World’s 50 Best” restaurant, Pujol. In 2011, Isabel moved to New York and worked at several top tier culinary concepts, including Empellón with chef Alex Stupak and Lauren Resler, ultimately returning to work with Olvera, chef Daniela Soto Innes, and Casamata Restaurant Group as Executive Pastry Chef at Cosme. During this time, Cosme landed 25 on the World’s 50 Best list.
During the pandemic, Isabel joined husband Chef Matt Conroy at MICHELIN Guide-recognized Lutèce, and is now an integral part of The Popal Group team in Washington, DC. Her February 2024 opening with the group, Pascual, pays homage to her home of Mexico City with a hearth-focused menu, and has quickly become one of the best restaurants in DC. Shortly after its opening in early 2024, Pascual became the Washington Post’s #1 Best New Restaurant, one of 14 restaurants in Eater’s “Best New Restaurants in America in 2024,” A New York Times “America’s Best Restaurant,” a Washingtonian Best New Restaurant, and an early addition to the MICHELIN Guide DC, among other honors.
