*Virtual* Pastry Basics Series: Pâte à Choux and Pie Dough

It’s likely that we’ve all been indulging in more sweets than usual these past few months, and with the holidays steadily approaching, now is the perfect time to brush up on your pastry skills. Learn the science behind these desserts, and by the end of the lesson, you’ll be able to create pastries that are baked to perfection. Join Chef Wendi James via a live Zoom session to learn the basics of creating homemade pâte à choux and pie and tart dough.

This class is a part of a Pastry Basics series.

Ingredient list:

1# unsalted butter
3 cups all purpose flour
2 ½ cups cake flour
1 1/2 cups sugar
1 cup cocoa powder
1/4 cup vodka
½ cup milk
1/4 cup crème fraîche or sour cream
4 ounces crisco shortening
Salt
2-4 ounces grated Gruyère cheese
8 large eggs
1 cup heavy cream or ½ pint ice cream
