A Q&A with Chef Wendi James
We are starting a new blog series where we ask our program partners to participate on our blog. Here, we speak with Chef Wendi James. Arguably known for the popular Knife Skills 101, we have released a series of great cooking classes with her to welcome the fall; check them out here.
What made you fall in love with cooking?
I began learning French when I was 10. I had a project for class where I had to review a French restaurant. My dad took me out to dinner for the project and then it became a regular thing. By 15 I knew I wanted to be in the kitchen.
What is your ultimate comfort meal?
Truffle risotto would be #1 – especially with braised short ribs. But I can’t deny that I love a homemade tomato soup & a proper (hearty sourdough & aged cheddar) grilled cheese sandwich.

What are your favorite meal prep shortcuts that don’t sacrifice flavor?
To still layer flavors- and taste as you cook, but also to learn to use a knife properly and how to cook because if your knife & basic cooking skills are solid, then you can spend 15 minutes cooking your dinner every night as opposed to hours one day making food that will be cooked, refrigerated, recooked, and disappointing. In other words, instead of looking for shortcuts, learn how to cook and season your food.
Can you provide tips for creating healthy meals that are packed with flavor?
Eat the rainbow (all the colors) and layer flavors. If you’re only using salt & pepper, expect to feel sad when you eat. Fresh herbs, spices, citrus zest, marinades, pan sauces – all these are your friend.
